Caramel popcorn

The perfect treat to go along with your favourite movie! Homemade from scratch and super delish!

Caramel can be difficult to make, but you can easily master it by following a few simple tips:
Always keep your ingredients ready in advance with proper measurements
Keep an eye on your caramel and work quickly
Keep the flame low to medium
Ingredients:
(60 gm) ¼ cup of popcorn kernels
1-3 tbsp butter
Salt as per taste
110 gm sugar
50 gm water
1/2 tbsp butter
1/2 tsp baking soda
A baking tray lined with parchment paper
Method:
Popcorn:
Prepare your popcorn. In any large and wide utensil, melt the butter then add the popcorn kernels and salt. Mix well and then cover with a lid, and turn the stove to medium heat.
Let the popcorn pop. Once there is a time gap of 10-20 seconds before the popping of the kernels, switch of the heat and let the remaining kernels pop.
Set the popcorn aside in a large bowl.
Caramel:
For the caramel, in a saucepan add in the sugar and water, Since it is a dry caramel, it can be stirred lightly. Let this mixture dissolve and come to a boil on a low to medium flame until it starts to change into a dark amber color.
Once you reach this stage, switch off the flame and add in your butter and baking soda and continuously mix, be careful since there is a lot of bubbling in this step.
Caramel popcorn:
Pour the caramel immediately over your popcorn and mix well.
After mixing , transfer your caramel coated popcorn into the lined baking tray. Do this quickly before the caramel starts to harden.
Let this cool down on the baking tray so the caramel can harden for about 2-3 minutes. Once cooled break your popcorn and transfer it to a bowl and enjoy!
