Marble Tea Cake

A soft spongy cake that you won't stop eating once you start!



This is an amazing cake, super soft, super fluffy and has the perfect balance of sweetness!


Why is it important to beat the sugar and butter?

Beating the sugar and butter incorporates a lot of air into the cake batter which results in a soft and fluffy cake!



You can make the cake as a delicious plain vanilla tea cake, or even a chocolate chip vanilla tea cake which is my personal favorite! You can even add in a mixture of various chopped nuts like almonds and walnuts :)


Ingredients:                                                   

125g butter(unsalted)

100g granulated sugar

2 medium eggs + 1 small egg  OR (2 medium and 1/2 medium egg)

3/4 cup + 2 tbsp flour

1/4 tsp baking powder

1/4 cup milk + 1 tbsp milk

1 tsp vanilla extract

3 Tbsp cocao powder



Method:

  • Beat using a hand mixer or stand mixer, all the butter(room temperature), sugar and vanilla extract for 7-10 until the butter changes color and becomes pale and the butter and sugar is well combined.


  • Then one by one add an egg and beat after every egg. Make sure to add the egg one at a time! After adding 1 egg, the batter may seem like its curdling, but do not worry keep beating it and add the rest of the eggs.


  • Sift the flour and baking powder in another bowl, then slowly add the flour and baking powder tablespoon by tablespoon, alternate with 1/4 cup milk into the wet ingredients, and continue beating until everything is well combined.


  • Divide the batter into two halves. Mix 3 tbsp cocao powder with 2 tbsp warm milk and mix well, then add this mixture into one half of the batter and mix well.


Assembling:

In a greased loaf pan add 3-4 spoons the vanilla batter then layer a few spoons of the chocolate batter and continue to layer it like this, then take a skewer and slowly swirl the cake batter once , bake in a preheated oven at 180 degree Celsius for 20-25 mins or until a toothpick or skewer comes out clean.
