Mini veggie burgers

An adorable n' delish batch of mini burgers for any occasion!

The onions soaked in vinegar add amazing flavor to these burgers. The crushed cornflakes coating adds a great crunch. This recipe is a must try and perfect for a party, will completely awe your guests and make everyone demand for more!
Ingredients: (8 mini burgers)
1 medium-large potato (boiled)
1/2 a carrot chopped small
1/4 cup boiled green peas (optional)
1 tbsp ginger-garlic paste
1/4 tsp coriander powder
1/4 tsp garam masala
turmeric powder
Chilli powder
Chaat masala
Salt as per taste
1/4 cup all purpose flour
1/4 cup corn flour
water
1 cup cornflakes crushed
2 tbsp oil
Bread (end sides if possible)
1/2 small onion cut into thin slices soaked in a few tbsp of vinegar
Ice burg lettuce
cheese slices (cut into 4 squares)
Method:
In a pan, heat 2 tbsp oil, to the oil add ginger-garlic paste, saute for a few seconds and then add turmeric powder. Add the carrots after a few seconds, add 4-5 tbsp water to cook the carrots. after a minute or so add the boiled potato and rest of the spices, then add the boiled green peas. mix everything well and then let the mixture cool.
After the mixture is completely cool, take the small round cookie cutter or make a small circle with foil to shape the mixture through it, freeze the mixture for 15-20 mins.
In a separate bowl, mix 1/4th cup flour and 1/4th cup cornstarch with some water until you get a medium thick consistency slurry. You can use only flour also if you dont have cornstarch available.
Coat the shaped mixture with the flour cornstarch slurry. And coat with crushed cornflakes. Freeze this for 5-10 mins. Then fry.
Once fried and still hot, put one of the cut cheese slice to let it melt.
Take a slightly bigger cookie cutter and shape the end slices of the bread to make it look like mini burger buns (16) , slightly toast these on a pan.
Assemble:
Add mayonnaise on both sides of the mini burger buns, add lettuce, the potato patty and the vinegar coated onions and once the burger is done, insert a toothpick to hold everything inside properly.
Serve hot.
