Triple chocolate muffins

These delectable and heavenly muffins are sure to make you run back for more. Every bite has a burst of chocolate!


Ingredients:
Dry ingredients:
1/2 cup all purpose flour
1/3 cup unsweetened cocoa powder
1 tbsp dutch processed cocoa powder (Optional)
1/2 tsp baking soda
1/4th tsp baking powder (add only if you are using dutch processed cocoa powder)
Chopped white, semi sweet dark and milk chocolate
Wet ingredients:
2/3 cup bittersweet dark chocolate or 1/2 cup semi sweet dark chocolate
2 tbsp butter
1/4 cup vegetable oil
2/3 cup brown sugar (with bittersweet dark chocolate) or 1/2 cup (with semi sweet dark chocolate)
1/3 cup plain yogurt
2 eggs
1 tsp vanilla extract
Method:
Sift all the dry ingredients in a large bowl
In another bowl, melt the chocolate and butter together using the double boiler method. Once melted, add in the brown sugar, oil and yogurt and mix well. Then add in the eggs one at a time. And finally add in the vanilla extract. Give everything a good mix.
Fold the dry and wet ingredients together, Just fold until combined, do not over mix. Finally add in the chopped white, semi sweet dark and milk chocolate.
Line your baking tray with cupcake liners and scoop your batter in. Bake at 200 degree Celsius for 18-20 mins or until a toothpick or skewer comes out clean.
Once baked, cool down the muffins and enjoy!
